They are similiar to butter cookies. I remember them being more of a flat cookie with a slighlty crispy edge and chewy center. I don’t remember them being overly sweet. They are very simple but had the most amazing taste. Maybe more vanilla than butter cookie?

If I forget to set my butter out to soften, I take a stick from the freezer and grate it using my box grater. That was one of my grandmother’s old tricks…

Speaking of butter, do you have a favorite tea cake cookie recipe you would like to share? I remember eating these growing up but cannot find the recipe that was handed down to me.

Another trick, when you need that frozen (or refrigerated) butter at room temperature for incorporation, is to use a coarse grater the stuff. It’ll loosen up immediatamente.

I’m the same way about stockpiling butter – I start to get antsy if I have fewer than three boxes in the house. Glad to know I’m not alone!
