Man my pork ribs were smokin, Nealsley! Followed your beef short ribs recipe, didn’t have pureed tomatoes, so I used Salsa (gulp). I had no celery or carrots (teenage boy ate them all). I don’t think they were missed. Don’t drink alcohol, but I had a bottle of Chardonnay stashed in the back of the cabinet so I used it. Plus I added 5 fat cloves of garlic minced at the start of the cooking (for luck). The boys were over for a rehearsal, we’re playing Topanga Banjo Fiddle Festival this Sunday. They were smackin their lips!! Bassist Paul asked for the link to your site so he can make his own ribs. He couldn’t believe how easy it sounded to make such a delicious dinner. Thanks buddy!

Hi Nealey, my gf made the Creamed Onion Gratin for Christmas dinner with the family and everyone loved it and several asked for the recipe. The one thing we are wondering about is that in the ingredients you list Parmesan cheese, but in the directions you mention Gruyere. Gf used parmesan and it was great, but Gruyere sounds delicious too. Which one do you use? Thanks!
